A true specialty in Normandy, the Norman tart is both delicious and tasty.

Ingredients for 4 persons :

  • 5 apples (elstar)
  • 30g butter
  • 2 cl of calvados
  • 1 shortbread roll
  • 2 tbsp. slivered almonds
  • 30 g of fresh cream

For the praline:

  • 50 g semi-salted butter
  • 100 g sugar
  • 50 g flour
  • 50 g ground almonds
  • 1 tbsp. tablespoon ofcinnamonin powder

For the praline:

  • Take the butter out of the refrigerator 30 minutes before using it.
  • In a salad bowl, place the butter, work it with a fork, incorporate the sugar and flour.
  • Add the almond powder and cinnamon.
  • Reserve.
  • Peel and wash the apples, remove the core. Cut the flesh into 1 cm cubes.
  • Melt the butter in a frying pan, sauté the diced apples.
  • Flambé with Calvados.
  • Roll out the shortbread, place it in a non-stick pie dish. Spread the diced apples on top, cover them with praline.
  • Bake and cook for 20 to 25 minutes.
  • Remove from the oven, unmold and place on a rack.
  • Serve the tart warm, sprinkled with slivered almonds and accompanied by crème fraîche.

You can make your own shortbread dough using a robot :

  • Place 250 g of flour, add 125 g of sugar and 125 g of soft butter.
  • Mix gently to coat the butter in the flour.
  • In the center, place a pinch of salt, a beaten egg and the seeds of a vanilla bean.
  • Mix quickly.
  • Shape into a ball, wrap in cling film and let stand for 1 hour in the fridge.
